Yes, every colour has been discovered. The range of light we can see with the human eye is a continuum of colour and only over a very limited range of wavelength of light. This part of the electromagnetic spectrum is very well understood and studied. It contains every colour we can see.
Steven has essentially answered this, but I thought I might blow your mind by saying that we have never discovered any colour, because colours are actually not real.
