It takes a while to learn how to handle venomous snakes first. At least 6 months to a year of full time working with venomous animals.
Then from there, milking involves head pinning, this takes a while to learn to do this safely as well.
So there is always an element of risk, and things can go wrong, but safety comes from experience and knowing your limits and not pushing them.
